The stuffed trout is amazing! Smoky and stuffed with mushrooms, crawfish, basil. The photo does not do it justice. A must try!

Etouffee is terrible. Plenty of crawfish, but bland, bland, bland. If it weren't for the onions and tomatoes there would be no flavor at all. Where the hell is the roux?
